Today we’d like to introduce you to Chris Zettlemoyer, owner of Renegade Food Truck Kitchen & Catering.
Before we jump into specifics about Renegade K&C, why don’t you give us some details about you and your story.
Growing up hunting and fishing in the sportsman-rich culture of South Louisiana, Chris was surrounded by food from a young age. Influenced by the cooks of his childhood, namely his Paw Paw and mothers of family friends, he decided to pursue a professional career in the culinary arts. Chris got his start working under famed Louisiana chef, John Folse, and soon after, attended Johnson and Wales University in Charleston, SC. From there, he dragged his wife and two daughters across the country, working in every time zone in the continental US, gaining experience cooking for small private dining venues to giant horse tracks. After sixteen years chasing the dream and sharing his knowledge in kitchens both large and small, he finally settled down in Fort Bend County in 2010.
Since making fast friends with the Smith family of The Barry Farm, Chris has enjoyed access to the freshest meats and vegetables possible, inspiring him to return to the foods of his youth. Through teaching butcher classes, practicing home charcuterie, and cooking for farm dinners he has forged new friendships and cultivated connections, making his latest endeavor, a food truck named Renegade Kitchen and Catering, possible.
Can you tell us some of your challenges or obstacles you’ve had to overcome on your journey with Renegade Kitchen & Catering?
Construction delays pushed our opening into mid summer. Its a tad bit hot out in this part of Texas, so its been a slower start than expected. Being the new kid on the block makes it tougher to get gigs but we are excited about the coming fall and the direction we are headed.
Let’s talk business! Tell us about Renegade Kitchen & Catering.
We are a food truck based in Fort Bend County. We specialize in Texas Bistro Cuisine. Some people will ask what that is. Its basically whatever we want it be that day using as many items as we can from the surrounding area. We are proud to partner with local businesses in Fort Bend County such as Blockhouse Coffee & Kitchen, Gina’s Acres, Texas Pickle Company and more. The thing that sets our truck apart is that we are very fluid and able to adjust our menu to fit any situation. Brunch, dinner, caterings, plated dinners, pig roasts. We can do it all.
Is there a characteristic or quality that you feel is essential to your success?
Integrity is most important to me. It is very important that we are where we say we are gonna be and doing what we say we are gonna do.
