Meet Tom & Jessica of Texas Pickle Company


Today we’d like to introduce you to Tom & Jessica Weldin of Texas Pickle Company.

Before we jump into specifics about your business, why don’t you give us some details about you and your story.

Together with our two children, we moved to Texas in 2013. We used to go to farmers markets every weekend and would always get these great, fresh pickles. We tried to replace them with store bought pickles but we were unsuccessful. We love to cook so it was obvious that we needed to learn how to make them ourselves. We bought a canning & pickling book and got reading. We produced a few jars of habanero dill pickles and left them out for friends and family. The response was overwhelming! We only had to hear “best pickles I’ve ever had in my life” a few times before realizing that maybe we had something special. We thought that this would be a fun family thing to do and it could teach our young children about farming, our community, and bringing a product to market.

Very early on, we decided we wanted to work with and support our local farmers. Having been brought up with little exposure to the sources of the food we ate, it was very important for us to make sure our children fully understood where their food came from and to understand the importance of the farmer in their daily lives.

In November of 2014, we had our first event at a local yoga studio and we were up and running! We’ve been selling at the Imperial Farmers Markets since January of 2015 and the local response has been fantastic.

Last year, we entered the H-E-B Quest for Texas Best competition. Out of almost 500 entrants, we were finalists and placed in the top 25! The press coverage of the event was amazing; we did a few TV spots where we talked about our products and our company. This was a fantastic experience.

Can you tell us some of your challenges or obstacles you’ve had to overcome on your journey to starting Texas Pickle Company?

The road to where we are now has been pretty smooth. One thing that we never anticipated was the huge support of other local vendors. Any questions that we’ve had along this journey we’ve easily been able to get answers to from this network of friends that we’ve created over the past few years. We always try to help out other businesses as well with their own journeys.

This amazing sense of community has been one of the more rewarding aspects that we hadn’t expected.

We use the freshest, locally sourced ingredients without the use of preservatives, additives, or dyes. Texture is a huge part of the TPC experience. Everything from the cut and size of the pickle to the canning process is carefully scrutinized in order to preserve the freshness of our ‘kirby cukes’.

Is there a characteristic or quality that you feel is essential to your success?

Fun drives a lot of the things we do. Working with food trucks, teaching pickling classes, participating in local fundraisers, and inventing new recipes are things that we enjoy doing.
