What ignited the spark in you to start your own business?
I grew up working at my mother’s restaurant. I went to the Culinary Institute of America and got a degree in baking and pastry. After completing my Bachelor of Professional Studies in Baking and Pastry Arts Management, I decided to return to Rosenberg and open a bakery to carry on the traditional Czech heritage.
Tell us about some of the challenges of being a small business owner
The biggest challenge we have is letting everyone know that in the bakery we make everything fresh and from scratch daily.
Tell us about The Old Main Street Bakery
We’ve been open for 4 years now, and we offer fresh fruit, meat kolaches, cookies, donuts, bread, cinnamon rolls, cupcakes and more, there is something for everyone. We create various traditional kolaches such as poppy seed and cheese flavored, but also a variety of flavors with fruit and the best sausage kolache! I want my recipes to stay true to our culture as I can make them. I’m using some of my grandma’s recipes, Czech and German in origin, for many of my pastries but especially my kolaches.
